Giant cookie cakes are all the rage in the baking world. I first saw this style of cookie cake from Israeli baker,Adi Klinghofer. Her letter and number cakes are typically covered in fresh flowers, fruit, macarons and meringues. I fell in love with her letter cakes and gave them my own spin using my signature cookie recipe and creating unique themes from a variety of toppings.
The best part about my sugar cookie recipe is how versatile it is. Its a simple no-fail recipe that can be used for SO many purposes! I was thrilled to discover it works just fine for a giant cookie, with a simple tweak in the baking time. Get recipe HERE!
With a buttercream filled piping bag fitted with a large round pastry tip, begin piping large dollops of icing onto first cookie layer. Gently place second cookie on the top of the icing dollops and repeat.
For a Cookie Monster Cookie Cake, I used a 1 stencil and topped it with cookie favorites: oreos, nutter butters, circus animals, nilla wafers, teddy grahams and filled the entire cake with chocolate chip cookie dough icing.
1. For the chocolate number cake, first preheat the oven to 350F. Beat the eggs and sugar together until frothy, and gradually mix in the softened butter. Mix the flour, cocoa powder, and baking powder together and add to the wet ingredients. Pour the batter into a greased pan and bake for 45 minutes.
To decorate the Number 3, spread the cream cheese frosting over the cooled cake. Press the marshmallows into the ends of the cake and distribute the MM's by color to make the cake look like a rainbow over clouds.
So. Letter Cookie Cakes? Yeah, I realise I am a bit late in posting the recipe for this one, the crazy phase of these was a little while ago now, but in all honesty I just hadnt got round to it. I do still utterly adore this sort of cake, so I am more than happy to post the recipe for it now, and hopefully its not too late for you guys!Â
One thing I must discuss from the beginning? Is that YES it technically is a Cake even though there is no cake involved in the bake. Its more the style of bake you could say? It would easily take the place of a cake at an occasion!Â
These have been around for a while now, and I am unsure of where they started. sorry. They come in many variations, some which do include sponges that are cut very thinly, and some that include meringue. but I thought I would start with cookie.
Ive made a few of these nows, and the biscuit can vary somewhat depending on what recipe you use, but I thought I would make it as simple as possible, and use shortbread. Ive made sugar cookie versions before, but that dough requires more ingredients, so maybe next time.
I thought that shortbread was easy, as the base of it is just three ingredients. Butter, Sugar and flour. You add flavouring in is you wish, for example I did Vanilla, but you can vary this to anything you fancy. Lemon, Orange, Mint, etc!
When making the biscuit dough, I really would recommend using actual unsalted butter. It just fares so much better, makes the dough easier to work with, and has the classic buttery taste that shortbread desires.
I went for a basic O shape as you can see, but you can cut out any letter or number you want, print it off, and make a stencil and cut to that. For the amount of dough I have used, it was perfect for three Os, and some off-cut shortbread cookies. If you want to make a massive letter, with three or four layers, this probably wont be enough biscuit dough.
For the Buttercream, I again just went simple with American Buttercream frosting, as sometimes it is just best. It does make the bake very sweet, but thats what you have to expect from a Letter Cookie Cake. It will be sweet!
Decoration wise, you can go as much, or as little as you want. I use aJumbo Round Piping Tip for this bake, with some Large Disposable Piping Bags. Its the easiest thing to use, as you can get the cute little rounds of buttercream that make the bake so symmetrical.
I then use anything I have in my fridge, or anything I fancy for the topping. Chocolate coated strawberries, raspberries, blueberries, mini meringues, edible flowers, chocolate bark shards, freeze dried raspberries, and so on!

Næst hlustaði ég á súkkulaði-elskandi hjarta mitt. Kakó smjörkrem með mismunandi pípulaga þjórfé Þessi tími gerði fyrir mjög einstakt útlit! Ég toppaði allt af með öllum uppáhalds súkkulaði sælgæti mínum og lítill smákökum.
Síðast, en ekki síst, aðalviðburðurinn - klassískt Adi lítur út með Lucky # 13 mín. Þessi var mikill. Það er toppað með litlum rósum í tveimur litum, makarónum, ferskum berjum, Lindor hvítum súkkulaði jarðsveppum, og sumir angurvær ógnvekjandi sprinkles og sixlets.
